Viva la pizza!

Raise your hand if you’ve been spending a lot of time in the kitchen? ME! I do 100% of the cooking in my house and some days I just don’t feel like putting in a lot of effort but that doesn’t mean I want to sacrifice on flavour. So today I’m sharing a tasty GLUTEN FREE PIZZA DOUGH recipe that is SUPER EASY to whip up. It takes less than 10 minutes to get the dough oven ready. The bonus is that it’s KID FRIENDLY too! My son is always happy to help when it comes time to decorate the pizza. And that makes it a win win for me!

Ingredients:

  • 3/4 cup warm water

  • 1 tablespoon sugar

  • 1 tablespoon yeast (I use dry yeast)

  • 2 cups gluten free flour (I use Bob’s Red Mill 1 to 1 flour. It has xanthum gum in it already, check your flour to see if it has it already added, if not I would add approx. 1 teaspoon)

  • a little bit of sea salt

  • 1 large egg

  • 1 tablespoon olive oil

  • 1/2 teaspoon apple cider vinegar

Directions:

INSTRUCTIONS

  1. Set heavy baking sheet on lowest rack of oven (if you have a pizza stone use that, it would make the dough even tastier) and preheat oven to 400°F.

  2. In a small bowl whisk water, sugar, and yeast and let sit for 5 minutes, or until it looks foamy.

  3. In a medium bowl combine flour and salt. Add in egg, olive oil, vinegar, and yeast mixture.

  4. With an electric mixer, mix on low speed for 1 minute.

  5. Using an oiled spatula, transfer the gluten-free pizza dough onto a piece of parchment paper. It will be sticky. Cover with another piece of parchment paper and roll the dough out to approx. a 10-12-inch “round” circle.

  6. Bake for 8-10 minutes.

  7. Decorate with toppings of your choice and bake for an additional 8-10 minutes.

  8. Enjoy!
